Manfrigole

"MANFRIGOLE"

Ingredients For the pastry
• 3/4 cup flour type "0"• 1/3 cup of buckwheat flour• 6.7 fl. oz milk• 2 eggs• salt q.b• black pepper q.b. For the filling• 3.5 oz bread 7 oz. cheese "Casera" or Fontina• 5.4 fl. oz. milk•3.3 oz. cream For cooking• 3 tbsp butter•2.5 oz of cheese cut into cubes

Dissolve flour in milk, add eggs, salt and black pepper and create a fairly liquid batter. Heat a pan with a diameter of 7.8 in. slightly oiled and make thin pancakes. Soak bread in milk then add cheese and chopped coarsely, put everything in the blender. Complete with cream, salt and pepper. Roll out on a work surface and fill the crepes spread with the cream. Roll up and slice thickness of approx. 1 in. Put swivels obtained in a bowl or plate portion buttered. Put a cube on each of cheese and heat in oven at 392 F ° C for about 10 minutes until cheese is melted.
Serve hot.
