1 kg of Kumquats
800 g sugar
1 lemon
water
Cook kumquats and lemon in boiling water, for 15-20 minutes. Drain them and let them for 24 hours in fresh waterThe next day remove them from water and cut them in half, making sure to remove all seeds. Squeeze all the juice of the lemon, adding pulp too. Put the sugar in 300 g of water, and let the kumquats boil in it with for about 40-45 minutes on medium-high heat. Once cooked, whisk everything and put the hot jam into previously sterilized jars: leave them upside down till the jam become cold.
